Our favorite streetfood was made “sosyal” by Chef Arch and gave it a modern twist that will not break your wallet. Some of the classics that we’re able to try were the Embotido Stuffed Crispy Pata, Creamy Garlic Tuyo Pasta, Balut in Red Wine Sauce, and a lot more.
For appetizer:
Balut in Red Wine Sauce – Chef Archie came up with this idea thinking how he can serve balut (fertilized duck’s egg) in the most sophisticated way, which people will not be afraid to try it. The balut actually looked like meatballs with sauce so, you might be able to trick your friends who don’t eat balut to eat this. 😅 Instead of using vinegar for the sauce, they used red wine, some aromatics and spices, and the duck’s au jus.

Street Style Barbecue Platter – the platter consists of isaw (chicken intestine), chicken feet, betamax (pork’s blood), chicken ass, and pork barbecue. Everything on it was already flavorful on its own but you can still dip it in sinamak (Iloilo’s version of spiced vinegar) or peanut sauce. The use of the latter was inspired by Thailand’s satay where they serve it with their skewers.

Deep Fried Tuna Skyflakes – a mix of spicy canned tuna and skyflakes which Chef Archie and his friends call “Pedigree”. This was new to me but he said that it was their barkada’s favorite pulutan back in his High School days. Now, he took it to the next level by making it into a deep-fried ball shape and serving it with a mayonnaise-ketchup dip.

Silken Tofu Crispy Tenga – instead of the usual tokwa’t baboy, Chef Arch up his game by covering the silken tofu with breading and using tenga (pig’s ear) instead of the usual pork. I really love the breaded silken tofu but I am still looking for pork since I am not a fan of tenga.

Hot Spicy Chicken Wings – this chicken wings were served with binatog on the side, though, I don’t really understand why. Chef revealed that binatog was his favorite and thought that adding the chicken will give it a twist from the usual and make it a complete meal. This was very innovative! Now, you can enjoy your favorite binatog with chicken wings. Yum!

Quail Egg Tempura – I have never seen a quail egg this sophisticated. This quail egg was cooked tempura-style instead of the usual orange batter and served with sinamak and home-made soy mirin sauce. Well, who doesn’t love quail eggs?

Four Cheese Caldereta – not just one, not just two, and not just three-cheese but four cheese was used in making this addicting Caldereta. Need I say more? This is our favorite!!!

Embotido Stuffed Crispy Pata – this innovation was the bomb! I really love the traditional embutido, but this was way so much better with crispy pata. I love the contrast on its texture – crispy and soft from the pork pata embutido. You should not miss this one as well!

Aside from that, they also have pizza and pasta dishes. What really caught our attention was their Chicharon Bulaklak, Isaw Pizza and their Creamy Garlic Tuyo Pasta.
Chicharon Bulaklak and Isaw Pizza – if you are someone who loves chicharon bulaklak, pork isaw, and pizza, this one is for you! The chicharon bulaklak may not be as crispy when deep-fried but this one complemented the pizza well. But, if you don’t want to be that adventurous, you can have their All-Meat Pizza which has bacon, ham, beef, and longganisa or their Four Cheese Pizza.

Creamy Garlic Tuyo Pasta – creamy, garlicky, and flavorful tuyo pasta. You won’t actually see the tuyo except for the one on the center, but its flavor was there. Make sure not to miss this out when you visit them!

1. Balut or fertilized duck’s egg with premature embryo is a well-known Pinoy street food which is usually sold at night.
2. The duck’s egg was incubated for 14 to 21 days depending on the local culture. After the incubation period, it is then boiled or steamed.
3. Balut contains beneficial nutrients to your body and is high in protein.
4. A balut has 188 calories.
5. Tuyo or dried fish is made by removing the water in the fish and letting it dry to inhibit the growth of microorganism and preserve it.
6. Chicharon Bulaklak is known in english as deep-fried pork mesentry. It is the fold of tissue which anchors the small intestine to the back of the abdominal wall of a pig.
